RIPALTA DOP extra virgin olive oil “Colli Orvietani” With this oil we wanted to pay homage to the origins of the family, recalling the ancient castle that dominated the Osa estate. When in 2020 we decided to certify our olive groves, RIPALTA was born, a blend of Moraiolo, Frantoio and Leccino in compliance with the disciplinary of the DOP "Colli Orvietani". It is an oil with a bright green color, medium-strong flavor with strong bitter and spicy notes, reminiscent of almond, artichoke and rocket, the nose evokes hints of fresh almond and pink pepper. The analyzes to which it is compulsorily subjected show a very high content of polyphenols and an acidity which to date has never exceeded 0.2. It is particularly suitable for important meat dishes and savory dishes in general. We annually propose RIPALTA in Italian and foreign competitions. Our company produces a limited quantity, we use only our olives, we are farmers, not traders.
